Lobster Guacamole Toast with Roasted Tomatoes

  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1/4 teaspoon dried parsley
  • 1/3 cup halved cherry tomatoes
  • 2 slices bread, toasted
  • 2 (2-ounce) packages WHOLLY® GUACAMOLE Classic Minis
  • 1/2 cup cooked, chopped lobster meat
  • Fresh microgreens to garnish
  1. In small saucepan, over medium heat, heat oil.
  2. Add garlic and seasonings; cook 1 minute.
  3. Add cherry tomatoes. Cook 3-5 minutes or until tomatoes are softened and seared.
  4. Top toasted bread slices with WHOLLY® GUACAMOLE Classic Minis, lobster and tomatoes.
  5. Garnish with microgreens.
