Air Fryer Chicken & Cheese Chimichanga Pinwheels

Chicken and cheese rolled up into pinwheels and air-fried – this recipe makes for the perfect appetizer!

- 4 large eggs
- 1 1/2 cups panko breadcrumbs
- 2 teaspoons chili lime seasoning plus additional for garnish (optional)
- 1/2 cup all-purpose flour
- 4 frozen chicken & cheese chimichangas, slightly thawed and cut crosswise into 24 (3/4-inch-thick) slices
- Nonstick cooking spray
- 7.5-ounces WHOLLY® GUACAMOLE Classic
- 2 medium tomatoes, chopped
- 1/2 cup thinly sliced iceberg lettuce
- 2 green onions, thinly sliced
- Preheat air fryer to 400° for 5 minutes. In wide, shallow dish, whisk eggs. In separate wide, shallow dish, whisk breadcrumbs and seasoning; place flour in third wide, shallow dish.
- Dredge both sides of chimichanga slices in flour, shaking off excess, then dip in eggs, allowing excess to drip off, then in breadcrumb mixture to coat, pressing lightly so breadcrumb mixture adheres; place on rimmed baking pan and spray both sides with cooking spray.
- In 3 batches, air fry pinwheels 5 minutes or until golden brown and heated through, turning once.
- Top with WHOLLY® GUACAMOLE Classic, tomatoes, lettuce and onions.
