Guacamole Onion Rings with Chili Crisp Crema

These onion rings will be the talk of the party! Guacamole fried inside the onion rings to golden perfection. Make this appetizer recipe for a delicious snack at home or your next backyard barbeque.

- 1 large yellow onion, cut crosswise into 1/2-inch-thick slices and separated
- 15-ounces WHOLLY® GUACAMOLE Chunky
- 1 cup sour cream
- 2 tablespoons chili crisp
- 2 tablespoons finely chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 tablespoon lime zest
- 2 cups canola oil
- 1/2 cup all-purpose flour
- 1 teaspoon fine sea salt
- 1 teaspoon ground black pepper
- 4 large eggs
- 3 cups panko breadcrumbs
- Line 2 rimmed baking pans with wax paper. Place onion rings in single layer on prepared pans; fill rings up to rims with WHOLLY® GUACAMOLE Chunky. Freeze onion rings 1 hour or until guacamole is completely hardened.
- In medium bowl, stir sour cream, chili crisp, cilantro, lime juice and lime zest; cover and refrigerate.
- In large skillet, heat oil over medium heat 7 minutes or until temperature reaches 350°. In wide, shallow dish, whisk flour, salt and pepper. In separate wide, shallow dish, whisk eggs; place breadcrumbs in third wide, shallow dish.
- Dredge onion rings in flour mixture, shaking off excess, then dip in eggs, allowing excess to drip off, then in breadcrumbs to coat, pressing breadcrumbs onto onion rings to adhere.
- In 3 batches, add onion rings to hot oil; cook 4 minutes or until golden brown, turning once. Transfer onion rings to paper towel-lined plate.
- Serve onion rings with chili crisp crema.
