Chicken Fajita Stuffed Peppers

An easy weeknight chicken dinner favorite! Our Chicken Fajita Stuffed Peppers are packed with flavor and topped with our WHOLLY® GUACAMOLE Chunky.

- 3 bell peppers, halved and hollowed
- 3 tablespoons olive oil, separated
- Salt and pepper
- 1/2 pound chicken, cut into 1″ pieces
- 1 fajita packet seasoning, separated
- 1/2 cup diced red bell pepper
- 1/2 onion, diced
- 2 tablespoons minced garlic
- 1 lime, juiced
- 1 1/2 cups pre-cooked rice
- 1/2 cup LA VICTORIA® Salsa
- 1/2 cup shredded Mexican cheese
- 1 1/2 cups shredded Pepper Jack cheese
TOPPINGS
- WHOLLY® GUACAMOLE Chunky
- Pico de Gallo
- Drizzle bell pepper halves with 1 tablespoon olive oil and sprinkle with salt and pepper. Cook at 375° for 10 minutes. Remove from oven and set aside.
- Season chicken with half of fajita seasoning. In medium saucepan, heat 1 tablespoon olive oil over medium heat and cook chicken for 3-4 minutes, or until internal temperature reaches 165°. Remove chicken from pan and set aside.
- In same saucepan, add red bell pepper, onions and garlic in 1 tablespoon olive oil over medium-high heat. Add fajita seasonings and cook for 3-5 minutes or until onions are translucent.
- In large bowl combine rice with lime juice and vegetable mixture. Stir in chicken, salsa and shredded Mexican cheese.
- Stuff peppers with mixture and top each with Pepper Jack cheese.
- Cook at 375° for 20 minutes.
- Top with WHOLLY® GUACAMOLE Chunky and Pico de Gallo.
