Guacamole Potato Salad

Guacamole Potato Salad

Ingredients
  • 1 pounds cleaned, scrubbed red potatoes
  • 1 (7 ounce) package of Wholly Guacamole Classic dip
  • 2 tablespoons chopped cilantro
  • 2 jalapeños, seeded and diced
  • 1 onion chopped, cooked crisp and crumbled
  • 4 slices bacon
  • 2 limes juiced
Instructions
  1. In a large pot, bring salted water to a boil. Boil for 15 minutes until potatoes are tender, but still firm. Drain and cool in the refrigerator.
  2. In a separate large bowl combine Wholly Guacamole dip, cilantro, jalapeños, onion, bacon and lime juice.
  3. Chop the cooled potatoes, leaving skin on. Add the chopped potatoes to the guacamole mixture. Add salt and pepper to taste. Chill and served cold.
