Sweet Potato Burrito

Sweet Potato Burrito

ingredients
  • 1 tsp Vegetable Oil
  • 1 lb lean ground beef
  • 2-3 Roma Tomatoes
  • 1/2 cup Shredded Cheese
  • 1 Large Sweet Potato, peeled and cubed
  • 1 tsp cumin
  • 1 tsp chile powder
  • Salt to taste
  • Pepper to taste
  • 1 garlic clove, minced
  • 1/2 tsp chopped onions
  • 1 can black beans, drained
  • 6 burrito-style tortillas
  • Wholly Guacamole® classic dip
  • Salsa
Directions
  1. Preheat oven to 350 degrees.
  2. Placed cubed sweet potatoes in a plastic bowl and cover with a moist paper towel. Microwave for 8 minutes or until potatoes are tender and cooked through.
  3. In a skillet heat oil to medium heat. Add garlic and onions and sauté for 3-5 minutes. Be carful not to burn the garlic. Add ground beef and all the seasonings. Brown beef until fully cooked.
  4. To the cooked ground beef add in sweet potatoes, drained black beans and tomatoes. Stir together. Then add the cheese and heat until cheese is melted.
  5. Using the tortillas, stuff each burrito with two tablespoons filling. Wrap tightly to create each burrito.
  6. Place burritos on a foiled baking sheet. Spray with cooking spray and bake for 10 minutes or until burritos are crispy and lightly toasted.
  7. Serve with Wholly Guacamole® and salsa.
