Sweet Chile Chicken Pizza

Ingredients:
  • 1 large pizza dough (Pre-made)
  • 2 chicken breasts, boneless and skinless, cut into small cubes
  • 1 cup Sweet Thai Chili Sauce
  • 3 roma tomatoes, sliced
  • 1/2 red onion, julienne
  • Fresh basil
  • Fresh Oregano
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 package Wholly Guacamole® Avocado Verde
  • 1/4 cup tortilla crisps (crispy tortilla strips)
  • salt and pepper
  • olive oil
  • (Optional) all purpose flour
Instructions
  1. Using your hands, begin to stretch the dough. Rotate the dough while pulling gently to get the desired shape and thickness of your dough (it doesn’t have to be circle, unless that what you want)
  2. Once your dough is stretched, drizzle a bit of olive oil on a sheet tray and lay your dough on top. Drizzle a little more olive oil over the dough and add a bit of salt and pepper. Place the sheet tray into a 425 degree oven for 10-15 minutes or until the dough is 75% done.
  3. While the dough is cooking, add 1 tablespoon of olive oil to a non-stick sauté pan over medium-high heat. Add the chicken and cook for 7-8 minutes or until mostly done. Next, add the sweet Thai chili sauce and stir to coat all of the chicken. Cook for another 5 minutes.
  4. Your dough should be done by this point, remove the sheet tray from the oven. Next, evenly spread the marinara sauce over the entire surface. Then add the chicken pieces evenly over the dough. Top with slices of tomatoes, red onion, basil, oregano and mozzarella cheese. Drizzle olive oil and a dash of salt and pepper and place the sheet tray bake into the oven for another 7-8 minutes or until the cheese is golden brown.
  5. Once the pizza is finished, remove it from the oven and drizzle 1/2 cup of Wholly Guacamole Avocado Verde over the top and sprinkle the tortillas crisps to garnish. Slice how you like and serve hot.
