Spicy Crispy Fish Sliders with Pepper Slaw

Spicy Crispy Fish Sliders with Pepper Slaw

Ingredients:
  • 2 filets of tilapia, each cut into 4 even pieces
  • 2 cups panko bread crumbs
  • 3 eggs
  • 1/2 cup green bell pepper, julienne
  • 1/2 cup
  • red bell pepper, julienne

  • 1/2 cup red onion, julienne
  • 1 package Wholly Guacamole® Classic dip
  • 1/2 cup sour cream
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • the juice of 1 lemon
  • the juice of 1 lime
  • 1 quart vegetable oil
  • 8 slider buns
  • salt and pepper
  • olive oil
Instructions:
  1. Using a deep pot, add the vegetable oil and heat to 365 degrees.
  2. While the oil is heating up, using a large mixing bowl, add the green bell peppers, red bell peppers, red onion, lime juice, a bit of salt and pepper and olive oil. Mix evenly to coat all ingredients, cover and place into the refrigerator.
  3. Once the oil is hot, add the eggs to a small mixing bowl and scramble. In a separate bowl add the panko breadcrumbs. Add the fish pieces to the bowl with the egg and toss to coat evenly on all sides, then using tongs, add 1 piece of fish at a time to the bread crumbs and toss to coat on all sides, then using tongs add the coated fish piece to the hot oil. Be sure to not “over crowd” the oil with fish (The fish pieces should not lay on top of one another.) Cook the fish for 3-4 minutes or until the fish is golden brown and crispy. Once the fish is cooked remove from the oil and place on some paper towel to drain excess oil. Repeat the process until all of the fish is cooked. (It may take 2-3 batches)
  4. While the fish is cooking, using a small mixing bowl, add the Wholly Guacamole Classic dip, sour cream, chili powder, smoked paprika, paprika, cumin, ground coriander, lemon juice and a touch of salt and pepper and mix to incorporate all ingredients evenly.
  5. To plate, add the crispy fish to the bottom slider bun, add some of the pepper slaw over the top. Add some of the sauce to the top slider bun and place over the pepper slaw, serve hot.
