Southwest Chicken Lettuce Wraps

Southwest Chicken Lettuce Wraps

Ingredients
  • 2 chicken breasts (bone-in skin-on)
  • 1 small head of iceberg lettuce
  • 3 tablespoons olive oil
  • Mango salsa
  • Wholly Avocado®Chunky dip
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 350 degrees.
  2. Place the chicken breasts on a baking sheet and pat dry with a paper towel.
  3. Rub dried chicken with olive oil and sprinkle generously with salt and pepper.
  4. Bake for 35 to 40 minutes.
  5. Remove from oven and allow to cool to room temperature.
  6. Once cooled, remove skin and cut into bite sized chunks.
  7. Place chunks into a large mixing bowl and mix with salsa and avocado (as much as you like).
  8. Add salt and pepper to taste and scoop mixture into lettuce leaf.
  9. Wrap up like a burrito and enjoy!
