Slow Cooker Chicken Tacos

Slow Cooker Smoky Chicken Fajita Tacos

Ingredients
  • 1 large onion, sliced
  • 2 bell peppers, seeded and sliced into strips
  • 1 1/2 teaspoons liquid smoke
  • 4 tablespoons + 1/2 cup salsa, your choice of heat level
  • 4 teaspoons soy sauce
  • 1 teaspoon A-1
  • 2 teaspoons sugar
  • juice of 1 lime
  • 4 boneless, skinless breasts, trimmed
  • tortillas
  • shredded lettuce
  • Wholly Guacamole Classic dip
  • salsa dip
  • sour cream
  • shredded cheese, I like sharp cheddar, but you can use shredded Monterey jack, or a blend of Mexican cheeses
Instructions
  1. Place the sliced veggies on the bottom of your slow cooker.
  2. Mix the seasonings together in a zip lock bag and put the chicken in and shake to coat well. You can cook right away or marinade up to overnight.
  3. Place the chicken on top of the vegetables.
  4. Pour 1/2 cup salsa dip over the breasts.
  5. Cover and turn slow cooker on low and cook for 4-6 hours on low.
  6. After 4-6 hours, remove the breasts, place on a cutting board and shred using two forks. You can return the shredded chicken to the crock pot to keep moist until ready to serve.
  7. Place a couple of tablespoons of the shredded chicken in the middle of a tortilla, add some of the cooked onions and peppers, add your choice of shredded cheese, shredded lettuce, sour cream, Wholly Guacamole dip, and additional salsa.
