Slammin’ Hatch Chile Pizza Bites

Ingredients
  • 4 tbsp Wholly Guacamole® Hatch Chile
  • 4oz cooked chicken breast
  • 1 piece wheat naan bread
  • 4 asparagus spears, chopped
  • 1 tbsp garlic paste (optional)
  • 1/4 cup reduced fat mozzarella
  • 4 tbsp pico de gallo (optional)
  • spray coconut oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Set a nonstick skillet on medium-high heat and spray with coconut oil. Add raw chicken breast and cook until the inside of the chicken is white and the juice from the chicken runs clear. Chop the chicken into small pieces and set aside.
  3. Prepare your veggies. Remove the bottom stems from the asparagus spears and chop up the remaining portions. Chop the green onion into small pieces.
  4. Spread Wholly Guacamole® Hatch Chile on the wheat naan bread. Then, add chopped asparagus, green onion and chopped chicken breast. Top with mozzarella.
  5. Place the pizza on a baking rack (preferred) or a baking sheet. Bake in the oven for about 15 minutes.
  6. While the pizza is baking, prepare fresh pico de gallo to add on top once the pizza finishes.
  7. Cut the pizza into 4 equal pieces and top each with 1 heaping tablespoon of pico de gallo.
