Shrimp Wedge Salad with Guacamole Dressing

Shrimp Wedge Salad with Wholly Guacamole® Dressing

Ingredients
  • 1 head of iceberg lettuce
  • 8 shrimp peeled and deveined
  • 2 tomatoes, diced
  • 1 large white onion, diced
  • 3 tablespoons chopped fresh cilantro
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 8 oz low-fat sour cream
  • 7 oz Wholly Guacamole® Classic dip
  • 2 tablespoons queso fresco Mexican cheese
  • Salt and pepper to taste
Instructions
  1. Heat grill pan over medium heat. In a bowl combine olive oil and salt and pepper. Add shrimp to the bowl and mix well.
  2. Add shrimp to grill pan and cook for 3 minutes. Flip shrimp and cook for an additional 3 minutes on opposite side. Remove from pan once shrimp are fully cooked.
  3. In a separate bowl combine tomatoes, onion, cilantro and lime juice. Add salt and pepper to taste. Mix well.
  4. In another bowl mix sour cream with Wholly Guacamole® Classic dip until completely blended.
  5. Cut iceberg lettuce into 4 wedges. Top each salad wedge with some of the tomato mixture and 2 shrimp. Drizzle on the sour cream-guacamole dressing and top with crumbled queso fresco cheese.
