Loaded Turkey Breakfast Burrito

Ingredients
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 medium red potato, unpeeled and diced into 1/2-inch pieces
  • Salt and freshly ground pepper
  • 1/4 cup chicken broth
  • 1/2lb JENNIE-O® Lean Turkey Breakfast Sausage Roll
  • 6 large eggs beaten
  • 1 cup HERDEZ® Salsa Verde
  • 8 slices JENNIE-O® Turkey Bacon, cooked until crisp
  • 1 cup shredded Pepper Jack Cheese
  • 6 large flour tortillas
  • 1 cup shredded Cheddar Cheese
  • 1-8oz packageWholly Guacamole® Classic Dip!
Instructions
  1. In medium saute pan, heat olive oil and butter over medium-high heat. Add diced potato and season with salt and pepper. Cook, stirring often, 5 minutes or until golden brown. Add chicken broth. Cover and cook 10 minutes or until tender.
  2. In separate large saute pan, add JENNIE-O® Lean Turkey Breakfast Sausage Roll and saute, breaking up sausage with a spoon and stirring often, 5 minutes or until cooked through. Add beaten eggs and cook, stirring constantly, until scrambled. Add HERDEZ® Salsa Verde, cooked bacon and Pepper Jack cheese and stir gently until cheese is melted.
  3. Wrap tortillas in a damp paper towel and microwave on HIGH (100%) for 10 seconds or until warm and pliable. Lay each tortilla on a work surface and evenly distribute scrambled egg mixture into tortillas. Sprinkle 2 tablespoons Cheddar cheese over egg mixture and top with a spoonful of Wholly Guacamole® dip. Roll burritos. Wrap each burrito in aluminum foil to keep warm.
  4. Eat immediately or cool and refrigerate, then warm for breakfast the next morning!
