Guacamole Breakfast Tostada

Guacamole Breakfast Tostada

Ingredients:
  • 4 corn tortillas
  • 1 potato (sliced thin)
  • 2 roma tomatoes, diced
  • 1/2 red onion, diced
  • 1 jalapeno, diced
  • 1 package Wholly Guacamole® Classic dip
  • 8 strips thick cut bacon, cooked
  • Coconut oil
  • 4 eggs
  • Salt and pepper
Instructions:
  1. In a large, non-stick sauté pan, over medium-high heat, add a teaspoon of coconut oil. Add the slices of potato, being careful that they don’t overlap one another. Cook for 3-4 minutes per side or until the potato slices are golden brown and slightly crispy. Remove and place on a paper towel to drain excess oil.
  2. In another small nonstick pan, over medium-high heat, add one tortilla and cook on each side for 2-3 minutes or until slightly crisp.
  3. Remove the tortilla then add one egg and a bit of salt and pepper. Cook for about 4 minutes or until desired doneness.
  4. While the egg is cooking, spread about 2 tablespoons of Wholly Guacamole Classic over the surface of the crisp tortilla, then add 2 cooked and crispy bacon strips, the potatoes and then place the egg over the top. Sprinkle the tomatoes, onions, and jalapeño over the top then serve.
