Grilled Chicken Fettuccine

Ingredients
  • 1 yellow bell pepper, seeded and julienne
  • 1/2 cup green onion, chopped
  • 1 cup roma tomatoes, seeded, cored and diced
  • 1 lemon, juiced
  • 3/4 cup WHOLLY GUACAMOLE dip
  • 3/4 tsp. salt
  • 3 chicken breasts
  • 1/4 tsp black pepper
  • 1 Tbsp. ground cumin
  • 1 Tbsp. canola oil
  • 1/2 lb fettuccini, uncooked
Instructions
  1. Mix 1/4 tsp salt, black pepper and cumin before tossing over chicken breast to coat.
  2. Grill the chicken for 2 minutes, then turn 45 degrees and allow to cook for another 2 minutes, flip and repeat.
  3. Allow to cool for 5 minutes, then slice chicken into strips.
  4. Start boiling water in a seperate pan for fettuccine, add a 1 /4 tsp of salt if desired. Recommended cook time is 13 minutes.
  5. Notes– Add the canola oil to a pan over medium high heat and saute the yellow bell pepper strips. Add the chicken to allow to cook for at least 4 minutes. Add the green onion, lemon juice, the remaining 1/2 tsp salt and diced tomatoes. After 1 minute, remove pan from heat and fold in the WHOLLY GUACAMOLE dip, mix, and cooked fettuccine.
