Flatbread Breakfast Sandwich

Ingredients
  • 2 teaspoons olive oil
  • 2 slices of flat bread
  • 1 slice pre-cut cheddar, cut diagonally
  • 2 eggs (may be substituted for egg whites)
  • 1/2 cup fresh spinach
  • 1 (2 ounce) package of Wholly Guacamole Classic Minis
Instructions
  1. Put the olive oil in a small, non-stick skillet and bring the temperature up to medium heat. Meanwhile, beat the eggs in a bowl until smooth.
  2. Cook eggs in skillet, flipping once to make sure they’re cooked through.
  3. To assemble your sandwich, lay your flat bread pieces side by side, put cooked egg on top, followed by spinach, the sliced cheddar, and your package of Wholly Guacamole Classic Minis.
  4. Fold sandwich over for serving. Salt and pepper to taste.
