Citrus Salmon Ceviche

Citrus Salmon Ceviche

Ingredients:
    • 1 pound fresh salmon, boneless and skinless, diced
    • The juice of 1/2 grapefruit
    • The juice of 2 limes
    • The juice of 1 orange
    • 1/2 cup radishes, sliced
    • 1/2 cup alfalfa sprouts
    • 1 tablespoon lime zest
    • 1 bunch cilantro
    • 1 teaspoon minced garlic
    • 1 package Wholly Guacamole Avocado Verde dip

 

  • sliced baguette, toasted
  • salt and pepper
  • 1/2 cup coconut oil
  • Olive oil

 

Instructions
  1. Using a large mixing bowl, add the salmon, grapefruit juice, juice of 1 lime, orange juice, 3 tablespoons Wholly Guacamole Avocado Verde dip, a drizzle of olive oil and salt and pepper. Stir to evenly coat the salmon. Cover and place in the refrigerator for at least 15-20 minutes.
  2. In a food processor, add the cilantro, juice of 1 lime, garlic, coconut oil and salt and pepper to taste. Blend on high for 60 seconds and reserve on the side for garnish.
  3. Once your salmon has had a chance to marinate, remove it from the refrigerator. To plate, add a tablespoon of the salmon then layer a few slices of radish on the side with a pinch of sprouts. Repeat the process. Place a couple of pieces of toasted baguette on the side and drizzle the whole plate with the cilantro lime oil. Serve chilled.
