Chicken Fajita Nachos

Chicken Fajita Nachos

Ingredients
  • 1/4 cup chicken breast sliced thinly
  • 1/2 cup green pepper and onion
  • 1 1/2 cups tortilla chips
  • salsa to taste
  • sour cream to taste
  • Wholly Guacamole to taste
  • 1/4 cup shredded cheddar or Mexican cheese
  • 1 TBSP. vegetable oil
  • Fajita seasoning to taste
  • Optional: sliced jalapenos
Instructions
  1. Heat oil in fry pan
  2. Saute chicken, onion and green pepper over medium heat, stirring frequently. Sprinkle with salt, pepper, fajita seasoning.
  3. While chicken/veggies are cooking, assemble chips on medium sized plate.
  4. When chicken/veggies are done, wait for them to cool for five minutes, and then place on bed of chips.
  5. Sprinkle cheese on top.
  6. Add sour cream, guacamole, and salsa evenly.
  7. Top with jalapenos if desired.
