Avocado Stuffed Salmon

Ingredients
  • 2 packages Gorton’s Lemon butter grilled salmon, defrosted
  • 1 c spicy Wholly Guacamole® dip
  • 1 egg yolk
  • 1/4 c bread crumb
  • 1 tsp lemon zest
  • Sea Salt and freshly cracked pepper to taste
Instructions
  1. Preheat your oven to 350. Using a sharp serrated knife, cut a pocket into the side of each piece of salmon. In a bowl, combine the spicy guac, egg, bread crumb and lemon zest to make the avocado stuffing.
  2. Stuff the fish with the avocado mixture, season each fillet with salt and pepper. Bake for 8 minutes and serve immediately.
