Avocado Breakfast Sandwich

Ingredients
  • 1 English muffin, halved
  • 1 tablespoon olive oil
  • 2 eggs (may substitute egg whites)
  • 1 slice cheddar cheese
  • 1 2oz. Wholly Guacamole® Mini
  • 2 slices bacon
Instructions
  1. Preheat a skillet at medium high heat. Coat skillet with 1/2 tablespoon olive oil.
  2. Brush the English muffin with 1/2 tablespoon olive oil. Set aside.
  3. In a small bowl, beat your eggs. Cook in the skillet on medium high heat for 2 minutes. Remove and set aside.
  4. Add 2 bacon slices to the skillet once eggs are removed. Cook 3 minutes, flipping once.
  5. Toast English muffin.
  6. Assemble the sandwich: one slice cheddar on the bottom, bacon, eggs.
  7. Top with a 2 oz. Wholly Guacamole Mini.
