Avocado Gazpacho

Ingredients

  • 2 cucumbers, peeled, seeded and diced
  • 1/2 cup lime juice
  • 1 cup chicken or vegetable broth
  • 1/2 cup chopped cilantro
  • 1/2 cup sour cream
  • 1 small jalapeno, seeded and chopped
  • 2 cups Wholly Avocado® Chunky dip
  • 1 tomato diced
  • 1/2 white or yellow onion, diced
  • Salt and pepper to taste
Instructions
  1. In a blender or food processor, blend all the ingredients except tomato until you reach a smooth consistency and season to taste with salt and pepper.
  2. Cover with plastic wrap and refrigerate for about 2 hours or longer.
  3. Serve cold and garnish with diced tomato.
