

Avocado Gazpacho

Ingredients
- 2 cucumbers, peeled, seeded and diced
- 1/2 cup lime juice
- 1 cup chicken or vegetable broth
- 1/2 cup chopped cilantro
- 1/2 cup sour cream
- 1 small jalapeno, seeded and chopped
- 2 cups Wholly Avocado® Chunky dip
- 1 tomato diced
- 1/2 white or yellow onion, diced
- Salt and pepper to taste
- In a blender or food processor, blend all the ingredients except tomato until you reach a smooth consistency and season to taste with salt and pepper.
- Cover with plastic wrap and refrigerate for about 2 hours or longer.
- Serve cold and garnish with diced tomato.
