Easy Vegetarian Couscous Salad

Ingredients

  • 10 ounce couscous
  • 1/2 tbsp vegetable or olive oil
  • 3/4 cup canned kidney beans, rinsed and drained
  • 3/4 cup chopped fresh tomatoes
  • 3/4 cup Wholly Salsa® dip
  • 1/3 cup corn
  • 1/4 cup chopped green bell pepper
  • 1/2 tsp cumin
Instructions
  1. Prepare couscous according to package directions using 1/2 tablespoon vegetable oil. Cool.
  2. Transfer couscous to mixing bowl.
  3. Add remaining ingredients; mix well.
  4. Chill 1 to 2 hours.
